For years they grew in silence and freedom, without interference, without haste. We let nature speak for itself — the intense southern sun, the mountain breeze, the dry red earth of the Barrocal. And it responded with a generosity that only patience can awaken.

Every olive is picked by hand, one by one, as it has always been. No machine can understand the rhythm of these trees or the delicacy of their fruit. Only hands that know each branch, each bough, each olive — the hands of our family, as they were our grandparents’ and their grandparents’ before them.
